at dawn、when the first rays of sunlight gently glide over the green hills、the farmers of Izumo set out to their gardens。it's kocha time。with care and respect for each leaf、they harvest the Yabukita variety、which later cascades into a cascade of ruby hues in your cup。

kocha opens the gates to a world of fermented tea、where flavours skillfully wander between juicy mango、delicate papaya、fresh melon、the sweetness of sugarcane、and the tender acidity of ripe fruits。

brewing method oyudashi お湯出し — hot brew

  • use 2g of tea per 100ml of water
  • brew with water at 90°C、steep for 2 minutes
  • pour 2〜3 times
