A sweet, creamy flavour and soft texture—this is what defines the new ceremonial matcha Watagashi from Izumo, Shimane Prefecture.

Watagashi translates from Japanese as “cotton candy,” and it’s no coincidence.

This tea comes from the picturesque western part of Honshu Island, which is surrounded by mountains and blessed with an ideal hot and humid climate for tea cultivation. The Daiki Oka farm lies under the watchful protection of Japanese gods and the ancient Izumo Taisha Shrine. Daiki and his brother continue the family tea tradition, which has been thriving for over 150 years.

This region's pristine air and water contribute to the creation of the finest matcha varieties.

preparation of usucha

• warm the chawan with hot water
• sift 2 g of matcha — approximately 2 chashaku — into the chawan
• add 80 ml of water at 70–80°C
• whisk with a bamboo whisk (chasen) for 30 seconds, moving it in a “w” motion

how does tea affect the body?

matcha (抹茶) is finely ground tencha leaves — a Japanese green tea that, благодаря shading before harvest, accumulates a high concentration of the natural amino acid L-theanine, which has scientifically proven positive effects on the body and nervous system.

2 g of matcha contains approximately 40–70 mg of L-theanine and 60–70 mg of caffeine. Together, they create a state of calm alertness and enhanced focus.
