mugicha 麦茶 — an infusion of roasted barley、brought from kyushu。a classic summer drink in Japan、especially popular in the south。often steeped cold — mizudashi — though hot brewing reveals different notes。

the aroma carries toasted grain、a gentle smokiness and a soft bitterness。the flavour is refreshing and delicate。mugicha contains natural antioxidants and is caffeine-free、making it well suited for everyday drinking。

brewing method oyudashi お湯出し — hot brew

  • use 5g of tea per 200ml of water
  • brew with water at 100°C、steep for 1〜2 minutes

*most varieties of japanese tea can be brewed with water from 60 to 90°C、adjusting the steeping time to achieve different strengths and flavor nuances。experiment!
