A sweet, creamy flavour and soft texture—this is what defines the new ceremonial matcha Watagashi from Izumo, Shimane Prefecture.

Watagashi translates from Japanese as “cotton candy,” and it’s no coincidence.

This tea comes from the picturesque western part of Honshu Island, which is surrounded by mountains and blessed with an ideal hot and humid climate for tea cultivation. The Daiki Oka farm lies under the watchful protection of Japanese gods and the ancient Izumo Taisha Shrine. Daiki and his brother continue the family tea tradition, which has been thriving for over 150 years.

This region's pristine air and water contribute to the creation of the finest matcha varieties.

How to prepare Usucha
  1. Preheat the bowl with hot water.
  2. Dry thoroughly.
  3. Sift 1.5-2 grams of matcha (2 scoops with a chashaku) through a sieve into the bowl.
  4. Pour in 80°C water (60-80 ml).
  5. Vigorously whisk with a bamboo tea whisk (chasen)
